quinoa & kale


i've been trying to be as gluten-free as possible, which has been a challenge for me because there are some thing that i can't help but crave.  for example things like paella, empanadas, and pan de huevo are things i will not and cannot give up.  however, i'm willing to limit myself to just eating these things for special occasions.  my favorite easy dinner recipe has been quinoa, kale, and sweet potato salad. it's been my go-to meal during the week. also, gluten free bread with a little bit of raspberry jam has been a treat in the morning.  gluten-free can be challenging, but i find when i plan ahead, like packing my lunch, and checking a restaurant's menu before i go to dinner makes it easer to stay on track.
